Argentinian Empanadas- Argentina

Argentina is the second largest South American country and the eighth largest in the world, it borders five other countries and the Andes mountain range. The currency is the Peso. Argentinian Empanadas Ingredients Dough for empanadas – makes about 20 medium or 30 small empanadas: 3 cups flour 1 egg yolk ½ cup of grasa - lard or butter or mix of both ¾ cup to 1 cup of warm milk ½ tsp salt Beef picadillo filling 1 lb ground beef 2 white onions, diced, about 3 cups 1/2 cup lard or butter 2 tbs smoked paprika 2 tsp chili powder or any ground hot pepper, adjust to taste 1 tbs finely chopped fresh oregano ½ tbs ground cumin 1 bunch green onions, finely chopped 3 hard boiled eggs, sliced ¼ cup sliced green olives Salt and pepper to taste 1 egg, white and yolk separated and lightly whisked Dipping sauce options: Balsamic chimichurri sauce Quick chimichurri sauce Aji criollo sauce Tree tomato hot sauce (for these recipes, go to the author's site listed below) I

Butter Chicken- India

India is located between Pakistan and Bangladesh. It is know for the spices in their dishes and the Taj Mahal, located in Dharmapuri. The population is 1.311 billion and the capital is New Delhi. India is prone to monsoons that sometimes last days. Butter Chicken Ingredients 25g butter 1 medium brown onion, finely chopped 2 cloves garlic, crushed 400g can tomato puree 600ml cream 2 teaspoons salt 1 teaspoon cayenne pepper 1 teaspoon garam masala 700g chicken breast, cut into 3cm pieces 2 tablespoons vegetable oil 2 tablespoons tandoori masala Preheat oven to 180 degrees C. Melt a 1/4 of the butter in a large frying pan over medium heat. Cook onion and garlic, stirring for 15 minutes or until the onion caramelizes. Meanwhile melt the remaining butter in a large saucepan over medium-high heat. Add the tomato puree, cream, salt, cayenne pepper, and garam masala. Bring to the boil then reduce heat to medium-low. Cover and simmer for 30 minutes, stirring occasionally.

 South Africa is the southernmost African country. It has the largest African economy, the population is around 52 million, it has three capital cities and 11 official languages! Cave paintings have been found in South Africa dating back around 75,000 years and the first ever human heart transplant was performed in Cape Town. Milk tart Ingredients Pastry: 2 cups flour 1 egg ½ cup sugar 2 tsp baking powder 125g butter pinch of salt Filling: 4 ½ cups milk 2 ½ tbsp cornflour 1 cup sugar 3 eggs pinch of salt 2 ½ tbsp flour 1 tsp vanilla essence a big spoon of butter Instructions: Pastry: Cream butter and sugar well together and add the egg, before beating well. Add all other ingredients – making a stiff dough. Press into one or two round cake tins/pie dishes. Bake blind for 15 minutes at 180°C (use wax paper to cover the pastry and place dry beans/rice over the paper to weight the pastry down). Louisiana has the tallest state capitol building in the country, 450ft high and 34 floors in total. Keftedes (Meatballs)- Greece

The earliest Greek civilisations thrived nearly 4,000 years ago and they lived in the countries now called Bulgaria and Turkey, and of course Greece. Greece is situated in the heart of Europe, to the right of Italy, the left of Turkey and below Bulgaria. The Greek Isles are a popular tourist attraction. Greek keftedes (meatballs) 500g ground beef (18 ounces) 200g ground pork (7 ounces) 1 large red onion, grated 1 clove of garlic, minced 1 cup breadcrumbs 1 egg 1/4 of a cup chopped fresh parsley 6-7 leaves fresh spearmint (chopped) and a pinch dried (optional) 2 tbsps olive oil 1/2 teaspoon oregano salt and pepper oil for frying flour for dredging (to dip food into flour to help when cooking) To prepare this traditional Greek meatballs recipe (keftedes), add all the ingredients into a large bowl and mix well (for about 5-10 minutes), squeezing with your hands, to allow the flavours to blend.  Costa Rica was found in 1502 by Christopher Colombus and he named the country Costa Rica because it translates to ‘rich coast’ and he believed there were precious metals in the land. More than a ¼ of their land is dedicated to conservation, and contains more than 5% of the globe’s biodiversity. Coconut cake Prep time: 25 minutes Oven time- 1 hour Makes 12 large slices Ingredients- 2 cups (250g) plain flour 3 teaspoons baking powder 1 teaspoon salt 250g butter, softened 2 cups white sugar 5 eggs 1 teaspoon coconut essence 1 cup buttermilk 1 cup shredded coconut Preheat oven to 180 degrees C. Grease and flour a 25cm ring tin. Sift flour, baking powder and salt together and set aside. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs thoroughly, one at a time. Mix in coconut essence. Add flour mixture alternately with buttermilk, mixing well with each addition. Fold in coconut. Pour batter into prepared tin. Bake in preheated oven for 1 h

France is located next to Italy and Spain. France was found by Hugh Capet in 0987 and called Gaul. Did you know that France has 265 different kinds of cheese? The population is more than 66.7 million people and the capital is Paris, the city of love. Crepes Ingredients 1 cup flour 1tsp caster sugar 240ml milk 2 eggs Directions Place ingredients in a food processor or blender with a pinch of salt. Blend until smooth, then strain into a jug. Cover and set aside to rest for 30 minutes at room temperature. Dip a piece of paper towel in melted butter and use to brush base of a 16cm non-stick crepe pan or frypan over medium heat. When hot, pour in just enough batter to cover the base. Tilt pan so batter covers base in a thin film and pour any excess back into the jug. Cook crepe for about 1 minute until underside is golden, then use a metal spatula to flip. Cook other side for just under a minute until golden Transfer to a plate and cover with foil to keep warm. Italy is found in Europe next to France and Switzerland and the sea surrounding Italy is the Mediterranean. The capital is Rome, Rome is famous for their architecture like, the Leaning Tower of Pisa and the Colosseum and more. Italy was home to some very famous people including Galileo, Leonardo Da Vinci, Michelangelo and Christopher Columbus. Lasanga Makes: 12 servings Oven time: 1 hour, 20 mins Ingredients 450g lean ground beef 2 and a 1/2 cups grated mozzarella 2 cups ricotta cheese 1/2 cup Parmesan cheese, grated 1 egg, beaten 1/4 cup parsley 12 lasanga sheets, uncooked 1 jar of your favourite tomato pasta sauce/puree or make your own 1 and a 1/2 cups water Directions: Heat oven to 175℃ Brown meat in large pan on medium-high heat. Meanwhile, mix 1 ¼  cups mozzarella, ricotta, ¼ cup Parmesan, parsley and egg until blended. Drain meat, return to skillet. Stir in pasta sauce. Pour water into empty sauce jar, cover and shake well. Vietnam is located next to Cambodia, the sea surrounding Vietnam is the South China Sea. Vietnam is famous for it’s food and the War, which natives call the American War. In 1954 the Vietnamese War began and more than 3 million people were killed, large parts of the country was scattered with landmines and its cities and towns were badly damaged. The war ended in 1975 and people had to live in refugee camps, many people died in these camps because of starvation and diseases. On a happier note their food is delicious!
